Pasta is one of the earliest western dishes that has been introduced into the Chinese market. However, most of us only have pasta at restaurants and even if some of us want to cook at home, the industrialised pasta products in the supermarkets seem to be our only choice. In this feature, I wanted to introduce handmade pasta to our readers. Very much like our noodles and dumplings, homemade pasta is also more delicious, healthier and more quality time spent! I invited the chef and founder of an Italian restaurant on the Bund to demonstrate to our readers from the making of the dough, shaping to the combination of the ingredients and sauce. It’s not only delicious, but also fun to make!
